This review suggests food contaminants may damage the enteric nervous system and help drive gut-to-brain neurodegenerative signaling relevant to Parkinson's disease.

Evidence

A PRISMA systematic review of 67 cellular and mammalian enteral-exposure studies found ENS remodeling, enteric glial activation, and in some models alpha-synuclein aggregation with vagal propagation to the brain after exposure to contaminants such as pesticides, bisphenols, acrylamide, manganese, and micro-/nanoplastics.

Caveat

The evidence is preclinical review evidence rather than human outcome data, and the authors note the need for better long-term low-dose models that reflect realistic exposure.
