Making and testing a new almond yogurt that produces GABA to help reduce stress

Updated

Abstract

A GABA concentration of 29 mM was achieved in a novel almond yogurt using a human breast milk-derived psychobiotic strain.

  • The yogurt was developed using the strain Enterococcus faecalis RIT BMS15-3, which is derived from human breast milk.
  • Fermentation conditions were optimized for enhancing GABA production, focusing on L-monosodium glutamate concentration, temperature, and time.
  • The final product exhibited high antioxidant activity, surpassing both commercially available dairy and non-dairy yogurts in total phenolic and flavonoid content.
  • The almond yogurt demonstrated suitable physical properties such as water-holding capacity and viscosity, along with favorable sensory acceptance (overall score of 7.52).
  • A 21-day storage study indicated sustained GABA levels and viable probiotic populations, suggesting good functional stability.
