Milk fat layer boosts bacteria’s serotonin and protective sugar production to support gut lining health

Abstract

Supplementing lactic acid bacteria growth medium with milk fat globule membrane (MFGM) significantly increased exopolysaccharide (EPS) production in select strains.

  • Serotonin is produced primarily in the gut by lactic acid bacteria and influences mood and mental health.
  • Interactions between lactic acid bacteria and food components like MFGM may enhance serotonin and EPS production in the gastrointestinal tract.
  • Of 137 screened strains of lactic acid bacteria, the top 10 producers were supplemented with MFGM to assess growth and metabolite production.
  • MFGM supplementation led to a notable increase in EPS production during the later stages of bacterial growth.
  • Low concentrations of metabolites in the secretome from some strains significantly boosted the expression of occludin in intestinal cell lines.
