Changing a natural pigment in tomato fruit and its effects on related plant compounds, cell structures, and metabolism

Abstract

Over 120 known metabolites were analyzed in tomato fruit with constitutive expression of an additional Psy-1 gene product.

  • Transcriptional upregulation of Psy-1, Psy-2, and lycopene cyclase B was observed, leading to increased enzyme activities and metabolites.
  • No correlations were found for several other carotenoid-related enzymes regarding gene expression, enzyme activities, and metabolites.
  • Changes in carotenoid composition were linked to alterations in plastid type and the early formation of chromoplast-like structures during fruit development.
  • Key metabolites such as sucrose, glucose/fructose, and glutamate in the Psy-1 transgenic mature green fruit showed similarities to those associated with fruit ripening.
  • Overall fruit developmental characteristics, including ethylene production and fruit firmness, remained unchanged despite the metabolic alterations.
