Nearly 80% of participants maintained postprandial glucose concentrations within target levels after consuming mixed meals.

  • The carbohydrate counting method effectively maintained glucose levels within target thresholds for up to 3 hours post-meal.
  • Participants had an average HbA1c of 7.5%, indicating overall glycemic control.
  • The addition of 11 ml of extra virgin olive oil resulted in increased postprandial glucose levels only for the pasticcio meal.
  • No significant differences in glucose responses were observed for grilled chicken with vegetables or baked giant beans after adding olive oil.
  • Overall body weight, waist circumference, and subjective stress remained stable throughout the study.
