Improving muscle quality and fat content in heat-stressed broiler chickens with selenomethionine and Bacillus subtilis supplements

Abstract

Heat stress significantly reduces growth performance and meat quality in broilers.

  • Broilers exposed to heat stress showed decreased growth performance and damaged meat quality compared to those raised under normal conditions.
  • Dietary supplementation with selenomethionine and Bacillus subtilis did not enhance growth performance in heat-stressed broilers.
  • Supplemented groups exhibited increased muscle pH, redness, yellowness, muscle fiber density, intramuscular fat, and triglyceride content compared to the heat stress group.
  • Reduced lightness, drip loss, shear force, and muscle fiber cross-sectional area were observed in the supplemented groups.
  • The combination of selenomethionine and Bacillus subtilis resulted in greater improvements in meat quality and flavor compared to each supplement alone.
