Chemical comparison of tea and coffee extracts finds a green tea component that may block two digestive enzymes

Updated

Abstract

The ethyl acetate fraction of green tea exhibited the lowest IC50 against pancreatic lipase at 0.264 mg mL⁻¹.

  • Green tea showed the highest phenolic content and antioxidant activity among the evaluated extracts.
  • Green coffee contained the highest alkaloid content compared to green and black tea.
  • The ethyl acetate fraction of green tea demonstrated competitive inhibition of alpha-amylase with an IC50 of 0.662 mg mL⁻¹.
  • Black tea exhibited mixed-type inhibition of alpha-amylase with a significant uncompetitive component.
  • The ethyl acetate fraction of green tea maintained 98.94% viability of human skin fibroblasts after 48 hours at a concentration of 500 µg mL⁻¹.
  • Molecular docking analyses suggested that hesperidin and rutin may play roles in digestive enzyme inhibition.
