How eating different forms of chickpeas affects small intestine metabolism and gut bacteria

Updated

Abstract

Ten participants consumed chickpea-based meals with different cellular structures, revealing distinct enteroendocrine hormone responses.

  • Food structure significantly altered the timing and levels of metabolites and dominant microbes in the gastrointestinal tract.
  • Meals with broken cellular structures led to early peaks in glucose and maltose, triggering rapid GIP hormone responses.
  • Intact cellular structures resulted in increased levels of duodenal amino acids and ileal sugars, which enhanced GLP-1 and PYY hormone responses.
  • Microbial profiles showed rapid changes, with oral bacteria reaching the ileum and correlating with specific local metabolites and PYY responses.
  • These findings suggest that the structure of food plays a crucial role in gastrointestinal metabolism and hormone regulation.
