Vietnamese common diet's impact on blood sugar after meals in adult women

Abstract

The glycemic response to a typical Vietnamese diet may be influenced by age and dietary fat ratios.

  • In subjects in their forties, the glycemic response to a common Vietnamese meal was lower compared to a meal lacking vegetables (p = 0.07).
  • Elderly subjects showed a significant increase in glycemic response with the typical Vietnamese meal compared to a modified meal with lower carbohydrate (p < 0.001).
  • A significant relationship exists between glycemic responses and age (r = 0.26, p < 0.01).
  • No association was found between glycemic responses and body mass index (p = 0.20).
  • Higher dietary fat ratios were inversely associated with glycemic responses (r = -0.28, p < 0.01).
  • Including vegetables in meals may help mitigate increases in glycemic response.
