How Inflammatory Foods Are Linked to Risk of Crohn's Disease and Ulcerative Colitis

Abstract

A 51% higher risk of Crohn's disease is linked to the highest dietary inflammatory potential.

  • Data from 166,903 women and 41,931 men were analyzed over 4,949,938 person-years.
  • 328 cases of Crohn's disease and 428 cases of ulcerative colitis were documented.
  • Individuals in the highest quartile of dietary inflammatory potential had a hazard ratio of 1.51 for developing Crohn's disease.
  • A shift from a low to high inflammatory diet was associated with a hazard ratio of 2.05 for Crohn's disease.
  • No association was found between dietary inflammatory potential and the risk of ulcerative colitis.
