Comparing plant and animal protein before meals in triggering insulin and hormone responses to reduce blood sugar after eating

Abstract

Preloading with soya tofu or a combination of soya and chicken significantly affected postprandial glucose and insulin levels in healthy adults.

  • Different protein types used as preloads interacted significantly with time to affect plasma glucose, insulin, incretin levels, and triglycerides (P < 0.001).
  • Soya tofu and rice preloading resulted in a lower peak glucose level and incremental area under the curve compared to chicken and rice.
  • The insulin response was significantly reduced after soya tofu and rice compared to chicken and rice.
  • Soya tofu and the soya/chicken combination both elicited higher GLP-1 and GIP responses than rice or chicken with rice.
  • Soya and soya/chicken preloading resulted in increased triglyceride concentrations compared to the other protein combinations.
