Health and nutrition of sustainable diets linked to environmental impact across countries

Updated

Abstract

Replacing animal-source foods with plant-based alternatives could reduce premature mortality by up to 12% in high-income countries.

  • A complete replacement of animal-source foods with plant-based foods may lead to reductions of up to 84% in greenhouse gas emissions.
  • Reducing underweight and overweight could result in a premature mortality reduction of up to 10%, but environmental impacts may change by less than 15% globally.
  • Adopting energy-balanced, low-meat dietary patterns could lead to a significant reduction in premature mortality, ranging from 19% for a flexitarian diet to 22% for a vegan diet.
  • These dietary changes are associated with substantial reductions in nitrogen and phosphorus application, as well as cropland and freshwater use.
  • Context-specific approaches are necessary, as dietary diversification may increase resource use in low-income countries.
